Be Colorful // Snack Happy

I don’t know if this is true for you, but if I don’t plan out healthy snacks for the day I tend to eat junk. I make sure that I have two snacks a day that are going to be full of good nutrients and make my plate look colorful.

Here’s my snack of the day that I shared with Dakota:DSC_1237This snack consists of sliced strawberries, bananas with chia seeds, and almond butter for dipping.

Snacks are so important for keeping your body energized throughout the day! Just some more advice from me to you :)

Roasted Banana Oatmeal

For breakfast this morning Dakota and I tried something different. I don’t normally like roasted bananas, but this was actually pretty tasty (although Dakota ate most of the bananas and left me with the oatmeal)DSC_1209Ingredients:

1 banana

1 packet plain oatmeal (I used Nature’s Path Organic Oatmeal Flax Plus)

Cinnamon

Instructions:

Preheat oven to 375 degrees

Cut up banana and place on lined baking sheet

Sprinkle banana slices with cinnamon

Put bananas in oven for 30 minutes

Make oatmeal according to packet directions

Add bananas on top

A Very Berry Smoothie

This morning for breakfast:DSC_1206Ingredients:

1/3 cup blackberries

1/3 cup blueberries

1/3 cup raspberries

1 tsp agave

1 cup yogurt (any flavor, I used vanilla)

1/2 cup orange juice

Instructions:

Blend all together and enjoy!

Watermelon Break!

When it’s a warm, beautiful day outside, just cut up that watermelon for a snack!DSC_0912You don’t have to have chips and crackers all the time. Don’t forget to snack on some fruit also!

Chocolate Protein Pancakes

I’m big on breakfast and love to try different “healthy” types of pancakes. Today I tried chocolate protein pancakes with blueberries!

2/3 cup coconut milk

1/2 cup flour

1 mashed banana

1 serving chocolate protein powder

1 tsp baking powder

Instructions:

Mix all ingredients together and pour small amounts at a time on hot frying pan with oil.

Top with butter, blueberries, and maple syrup.

These were so good! However, Dakota didn’t like the pancakes themselves, so she snatched up all my blueberries and left the pancakes for me to eat.

My Meals for Disneyland: Save Money & Eat Healthy!

Going on a trip to my favorite place on Earth!? (Or any theme park, for that matter?) Pack some healthy snacks and meals! Trust me, you will feel so much better and more awake than eating any of the junk food that you can buy at the stands.

So, what did I bring along?:

Sliced peaches

Banana

Nature Box Guacamole Bites (which are amazing by the way!)

Celery sticks, corn, carrots

Fruit cup with vanilla yogurt, raspberries, blackberries, topped with agave

Roasted chickpeas

Pasta made with red vinegar sauce, tomatoes, and mozzarella cheese

I also brought along green tea and hot chocolate packets. If you ask for a cup of hot water from Starbucks, they will give it to you for free. I just added my green tea, or hot chocolate packet and I had the perfect cup of goodness for myself.

I was worried that bringing along all of this would make me feel weighed down, but I was able to fit everything in Dakota’s diaper bag along with her milk. I hung the diaper bag on the stroller and barely even noticed it was there (until I was hungry, of course!) Plus, I felt amazing all day and spent NO money, which is also a good thing when you’re going on a big trip!

Gardein Chicken Tenders: A Colorful Dinner

 

Sometimes, I need to just make an easy dinner to take a break from the kitchen! So, I put together Gardein chicken tenders, corn, steamed broccoli, and carrot slices.

What I love about Gardein is the fact that it is vegan, tastes amazing, and I can put together anything I want with it (usually a plate full of vegetables. Plus, it gives me that break that I need from cooking my days away in the kitchen.

Anyway, short post, but I think it’s important that you know how to put something simple and healthy together for those days when you just don’t feel like cooking.

Almond Butter Cookies

Ever have cravings? I did today! I really wanted some peanut butter cookies. Sadly, I knew I was out of peanut butter, but remembered I have almond butter in the fridge! So I knew it was time to create some almond butter cookies!DSC_0601Ingredients:

1/4 cup almond butter

2 tbsp butter

1/2 cup sugar

1 egg

3/4 cup flour

1/2 tsp baking powder

1/2 tsp vanilla extract

Instructions:

First, set the over to 350 degrees.

Mix together the almond butter and butter in a bowl with an electric mixture until smooth.

Add sugar and vanilla to mixture and mix well, then mix in the egg.

In a separate bowl, sift together flour and baking powder then mix in with the almond butter mixture slowly.

Bake for 17 minutes.
DSC_0606Dakota and I were in heaven! These definitely satisfied my craving!

Earnest Oats: Can I Make it Good?

DSC_0576 So, I signed up for Secret Santa on Reddit last Christmas. I mentioned that I was interested in vegan food and cooking and my Secret Santa sent me a box full of vegan food! I loved it and have already gone through more than half of it. Included in the package was Earnest Oats. I’d never heard of it, or tried it, so I was excited. I cooked it according to the directions on the back of the package, took one bite, and realized that it definitely needed some tweaking!

The Basics:

These oats are described as the Mayan Blend, a mix of cocoa, pumpkin seeds, and cashews. For half a cup, you get 190 calories, 7 grams of protein, 25 grams of carbs, 15% iron, and more. There are lots of great stuff in this blend, which makes it perfect for a healthy breakfast!

The Pros:

As mentioned, you get so many great nutrients in this blend. Plus, you get a lotDSC_0582 of it. I’m sure you could get at least 10 servings out of it or more depending on how much you typically eat in the morning.

The Cons:

I cannot figure out a way to make this blend taste good. Without any sweetener, it is too bland for me. This morning I even tried adding sweetener and cut up fruit, but it still wasn’t great.

Overall, this product is not for me. However, I think that if you enjoy oats for breakfast and know of a better way to make it taste more flavorful, then this is worth the price! If you have any suggestions for me, let me know! I would love to incorporate this goodness in my diet without feeling like I have to force it down!

 

Vegan Mango Pudding

It was a very hot day today, so this vegan mango pudding made the perfect sweet treat for Dakota and I to enjoy!DSC_0562Ingredients:

1 1/2 cups of tofu

1 tsp of Cinnamon

1 tbsp maple syrup

1 cup sliced mango

Instructions:

Basically, you just blend all ingredients together, pour into bowl, and add a dash of cinnamon on top.DSC_0566

Super simple, super easy and Dakota couldn’t wait to get her hands on it! :p
